Puerto Rican Potato Salad "Ensalada de Papa"

Ready to Make Your Own?

Let’s bring a little Puerto Rican sunshine to your holiday table with this healthy, flavor-packed Ensalada de Papa. It’s easy to make, totally customizable, and guaranteed to wow your guests!

Ingredients

  • 2 ½  lbs russet or yukon gold potatoes, peeled and cut into 1′′ cubes
  • 1-2 large carrots, peeled and sliced
  • 3-4 eggs
  • 1 tbsp Healthy Rican Adobo 
  • 1 tbsp apple cider (or white) vinegar
  • 1 sweet apple (Honeycrisp or Gala), peeled, cored, diced (optional)
  • 3/4 cup diced bell pepper (any color)
  • ½ red onion, diced
  • ¼ cup chopped roasted red peppers
  • Diced ham (optional)
  • ¼ cup pitted green olives, chopped (optional)
  • 2 cups mayonnaise
  • Salt and pepper to taste
  • Paprika, green onions, roasted red peppers for garnish

Instructions

  1. Boil potatoes and carrots: Place potatoes and carrots in a large pot; cover with salted water. Bring to a boil, then reduce heat and simmer until tender (about 10–12 minutes). Drain and let cool. While potatoes cook, toss diced apple (if using) with vinegar to prevent browning and let sit.
  2. Cook the eggs: In a separate pot, boil eggs for 10 minutes. Cool, peel, and chop.
  3. Mix the salad: In a large bowl, combine the apples, with the rest of the ingredients. Once the potatoes are cool, add them along with the diced hard boiled eggs into the apple mix. Gently fold in the mayonnaise, coating everything evenly. Add extra mayo if desired. Taste and adjust seasoning if needed.
  4. Chill: Cover and refrigerate for at least 2 hours (or overnight) for best flavor.

Serve: Garnish with paprika, green onions, cilantro or roasted red peppers. Serve cold and enjoy with your favorite Puerto Rican holiday dishes!
