What is Adobo?
In Puerto Rican homes, Adobo is that all-purpose blend of garlic, oregano, black pepper, turmeric or annatto, and salt. It’s sprinkled on everything: meat, beans, veggies, even rice. And while every family has their own special twist, the purpose is always the same: to infuse every meal with bold, cultural flavor.
But Adobo isn’t just Puerto Rican. The word comes from the Spanish word “adobar,” meaning “to marinate” or “to season.” Spanish colonizers brought their own version, and over centuries, every Latin country put their own spin on it.
